Healthy Options Highlighted on New Ruby Tuesday Menu

Maryville, Tenn. Ruby Tuesday is making it easier to eat healthy while dining out, with the addition of lunch salads, more seafood, and new choices on the Fresh Garden Bar.  In addition, a new “Fit & Trim” symbol appears next to items on the menu that have 700 or fewer calories.   

Ruby Tuesday founder and CEO, Sandy Beall, says, “We’re giving our guests more options and making it easier for them to identify healthier choices with the inclusion of the Fit & Trim symbol.  We’ve added new selections while keeping our focus on fresh ingredients and bold flavors.

“These are great tasting dishes,” says Peter Glander, Ruby Tuesday’s Executive Chef, “with absolutely no compromise on flavor.”  He cites the Herb-Crusted Tilapia, one of the restaurants’ most popular seafood dishes, as an example.  The tender, mild fish is crusted with panko garlic bread crumbs and topped with lemon-butter sauce.  It is served with fresh, steamed broccoli and white cheddar mashed potatoe, and has less than 700 calories.  A total of 16 entrees on the new menu are designated Fit & Trim.

“The new menu offers even more variety,” says Kimberly Grant, Ruby Tuesday’s Executive Vice President.   “For example, our guests are free to choose which two side items they would like with any entrée selection.”  And the number of side dishes is growing, with healthy additions that include fresh grilled green beans and fresh grilled asparagus. To make the selection process even easier, the choices are divided into three categories. “We have our Classics, our new Fit & Trim sides, and our Premium sides – a group that includes a new baked macaroni-and-cheese,” says Grant.

For the lunch crowd, Ruby Tuesday has added a Petite Lunch Salad offering.  Smaller portions of the Grilled Salmon Salad, the Carolina Chicken Salad, and others are available until 4:00 p.m.  “The Petite Lunch Salad is perfect if you’re on the go or looking for something lighter,” says Glander.  Ruby Tuesday’s signature Fresh Garden Bar also now has more variety with the addition of pepperoncini, banana peppers, sun dried tomatoes, cauliflower, apples, and green olives.

Ruby Tuesday recently began serving complimentary fresh-baked Garlic Cheese Biscuits to all guests. “Our delicious biscuits are a savory, yet sweet accompaniment to the meal.  They are made from scratch and baked fresh throughout the day so they’re delivered to the table piping hot,” says Glander.  One final addition to the menu is the growing list of premium wines that includes Cellar No. 8, Gnarly Head, Bonterra, Coppola, and Rodney Strong, among others.

“Ruby Tuesday guests now have the freedom to choose, and not just their sides.  They can create their own Baby-Back Rib Platter with Louisiana fried shrimp or chicken wings, or they can add lobster tails or Lobster Mac-n-Cheese to their steak entrée for just $5 more,” says Beall.  The CEO says he is confident guests are going to like the new menu, based on feedback from the test markets.  “It’s clearly a departure from the not-always-fresh food that is still common at typical bar-and-grill restaurants,” says Beall. 

All of the new menu changes are a continuation of Ruby Tuesday’s “Fresh Taste, Fresh Place” brand transformation.  In 2005, the company began a reimaging initiative that included a focus on fresher food and gracious hospitality and concluded with the creation of a contemporary new look for its restaurants. Initial Sevier County Education Hall of Fame Class Inducted

Sevierville, Tenn. – Last night, the first class of honorees for the Sevier County Education Hall of Fame was inducted during the 16th Annual “Teacher of the Year” Banquet and Ceremony held at the Park Vista Hotel and Convention Center.  The Hall of Fame was created by Sevier County Bank in partnership with Sevier County Schools to recognize outstanding teachers, administrators and support staff.  The initial class includes fourteen recipients, each receiving an eternal flame trophy, while their names will appear on a plaque in the Sevier County Education Central Office. 

“This group represents the absolute best of Sevier County Schools, spanning many years of education in this county,” said Dr. Jack Parton, Superintendent of Sevier County Schools.  “We would like to thank Sevier County Bank for being the driving force behind this wonderful initiative, helping us honor and recognize those who have given so much of their lives to our schools, students and this community.” 

2010 Sevier County Education Hall of Fame Class

“We have so much admiration and respect for the time and dedication all of the teachers, administrators and support staff put forth,” said R.B. Summitt, Sevier County Bank President.  “The Hall of Fame provides a way to recognize their hard work and also celebrate the achievements of school system employees’ from many years ago that have played a large role in shaping the Sevier County community.” 

Below is a list of this year’s inductees: 

Mr. William Wesley Williams – Mr. Williams was born and raised in Sevierville, TN and graduated from Sevier County High School in 1956.  He began teaching at Sevier County High School in 1966, teaching for 37 years before a short-lived retirement.  He taught for seven more years before retiring once again this past January.  He taught every science course available during his 44 years at Sevier County High School. 

Mr. Chan F. Huskey – A graduate of Pittman Center High School in 1934, Mr. Huskey held a number of positions in the Sevier County School System.  He served as a teacher, principal, Superintendent of Schools, coach and Board of Education member as well as working in the Tennessee Education Department.  He worked at a number of  Sevier County schools, including Bellevue, Flatt Creek, Dripping Springs, Fair Gardens, Gatlinburg Pittman High School, New Center, Fairgrounds, Pi Beta Phi, Sevierville Middle School and Sevier County High School twice. 

Dr. William A. Smith, Jr. – Dr. Smith was an educator all of his life – not just in academics, but in his teachings of life, responsibility, joy, accountability and love, by his story telling and by example.  Throughout his years in the Sevier County Education System, Dr. Smith wore many hats from teacher to assistant principal to principal and Central Office Supervisor.  The late Dr. William A. Smith, Jr. and his wife Sherry have two children, Will and Kristy. 

Eleanor Hayes – Eleanor Hayes’ title was Instructional Supervisor for Middle Grades Education, but her dedication to middle grades students reached far above and beyond her job description.   She created many unique programs that continue to provide academic enrichment within the Sevier County School System, including the County-wide Spelling Bee, Science Fair and Fun and Fitness Day. 

Emma K. Atchley – A native of Dayton, TN, Mrs. Atchley began her time with Sevier County Schools as a substitute teacher from 1955 until 1964.  In 1964, Emma became a full time educator spending a half day teaching French at the elementary school and the other half teaching English and math at Sevier County High.  From 1965 until 1994 she taught English, algebra and geometry at SCHS.  In 1988, Emma was selected as the Sevier County Secondary Teacher of the Year. 

Grady Floyd – For many years Mr. Grady took care of the Seymour and Seymour Intermediate buildings.  He led his life as a model for others to follow.  Nothing was ever not his “job.”  He was always looking for a project, always ready to help fix something and always there, taking great pride in all that he did. Mr. Grady considered a clean, safe building as important as a textbook. 

Johnnie M. Ballard – Born in 1915 in the Boyd’s Creek community, the first school she attended was built on land donated by her family to Sevier County and aptly named, Ballard School.  After this school closed she then went to Chilhowee Elementary, now known as Seymour Elementary, where she worked as a teacher and principal for most of her 40 years as an educator. In 1963 she was named principal of Seymour Elementary, the only female principal in Sevier County at the time; she also was a full time teacher and the school’s secretary. 

Julia P. Householder – Mrs. Householder was born in Atlantic City, New Jersey and taught at Sevier County High School for 33 years.  Her subjects included civics, geography, business law and salesmanship, world history and American Government.  She also had many other responsibilities within the school and was the first guidance counselor at Sevier County High School.  In 2009, she was inducted into the Sevier County High School Athletic Hall of Fame and later received a diploma making her an honorary alumnus of SCHS. 

Leroy Helton – Mr. Helton grew up in Sevier County and graduated from Sevier County High School in 1966. Following graduation from the University of Tennessee, Helton began teaching agriculture at Sevier County High School and continued in this position until his retirement in 2004.  He taught for 39 years and also enjoyed working with his students in the Agriculture Education youth organization (FFA). 

Mary B. McMahan – Mrs. McMahan was born on July 7, 1896 in Williamsburg, Kentucky.  She spent 38 years teaching at Pleasant View School in Sevierville, and was the first teacher in Sevier County to earn a Master’s Degree and the only teacher in Sevier County for several years to obtain this high level of education.  Mrs. McMahan was honored November 10, 1968 along with five other women as the most deserving Sevier County Educational Americans at a service banquet sponsored by the Jayettes Organization of Sevier County. 

Norma Elizabeth Stonecipher Blair – She graduated early from high school in Oakdale, Tennessee.  In 1971, her family moved to Sevier County and was hired by Sevier County High School, where she set out to prepare students for their college careers.  She devised and wrote a course curriculum for Advanced Composition, which her principals encouraged her to implement in the classroom.  In 1990, she was nominated as East Tennessee Regional Teacher of the Year. 

Reba Caughron Hood – Reba Hood served Sevier County for 60 years, beginning her teaching career at Laurel Lick School, a small two room school, in Sevier County in 1939.  She then taught high school English at Pi Beta Phi High School in Gatlinburg before serving as principal of Underwood and Sunset Gap School.  She later returned to her home community of Pigeon Forge where she taught from 1949 until her retirement in 1988.  In 1988, she opened Montgomery School where she continued to share her love for children for the next fourteen years.   Mrs. Hood was named to the Tennessee Teachers Hall of Fame by the Tennessee Education Association in April 2000. 

Rubye F. Shields – Born on October 20, 1914 in Vardaman, Mississippi, Mrs. Shields and her husband moved to Sevier County in 1944.  She began teaching at Laurel School before going to the one room Shady Grove School.  When Shady Grove closed, Mrs. Shields went to Caton’s Chapel as principal and teacher.  In 1956, Mrs. Shields began teaching English at Sevier County High School until a science position became available.  She later became head of the science department and taught biology, chemistry, and physics.  She taught the first physics class offered at SCHS, and in 1979 she retired after 37 years of teaching. 

Freda Hodges – A graduate of Sevier County High School, Mrs. Hodges worked as an assistant and drove the bus for the Douglas Cherokee Head Start Program for several years.  After that, she spent time at Kodak Elementary before moving to Northview Middle.  In 1985, Mrs. Hodges began working at the Sevier County Education Central Office, serving as a receptionist until she retired at the end of 2001.  Since her retirement in 2001, she has worked as a receptionist part-time at the Central Office, bringing her time spent with the Sevier County Education System to 35 years and counting.

Santa Spotted Surfing, Sliding and Splashing at Secret Sevierville Getaway

Dave McGregor, general manager at Wilderness at the Smokies, said he could not confirm nor deny the special visitors, but eyewitnesses claim they recognized Mr. and Mrs. Claus the minute the couple arrived and quietly headed for Runaway Canyon, the resort’s newest waterslide attraction that opened Thanksgiving weekend.  Santa told one guest that riding the new Runaway Canyon slide – with its winding channels and gargantuan tunnels that send riders blasting through explosive turns and 360-degree loops – was like flying behind his reindeer on Christmas Eve.  After numerous rides on the five-story high Runaway Canyon, Mr. and Mrs. Claus slid into lounge chairs next to the indoor wave pool to kick back, relax and read for a while.

Before heading back to his room, Santa spent some time in the wave pool and hot tubs with Mrs. Claus, he then grabbed a bodyboard and hit the SurfRider – where 19,000 gallons of water per minute create a five-foot, ocean-like wave.  Guests were amazed that a resident of the North Pole could have such wild surfing skills.  When he finished riding the waves, Santa received a standing ovation from his adoring fans.

International Franchisees Have Appetite for Ruby Tuesday

MARYVILLE, TN – Casual-dining restaurant leader Ruby Tuesday, Inc. has announced new international franchise agreements for the development of its flagship brand in the Middle East and the United Kingdom. The company has also granted franchise rights for Wok Hay, an Asian-focused casual dining concept, in the Republic of Trinidad and Tobago and Chile.

“Ruby Tuesday’s international growth continues at a steady and reliable pace,” said Mark Ingram, President of Global PartnerShips, the company that manages Ruby Tuesday’s international and domestic franchise development. “We are excited to add new development territories to an existing franchise, sign an agreement for the first Ruby Tuesday in the U.K., and launch international franchising for Wok Hay. This growth proves there continues to be a high level of confidence in the brand and its performance,” he added.

Development rights for three new Ruby Tuesdays in the eastern territories of Saudi Arabia have been granted to an affiliate of Daliya Al-Wataniya for General Trading and Contracting W.L.L., the current franchisee for the countries of Bahrain, Oman, Jordan, and Lebanon, and six additional restaurants will be developed in the Emirate of Abu Dhabi by Bin Hendi Hospitality, the franchisee that now has the rights to open 18 Ruby Tuesday restaurants in all seven Emirate nations over the next five years.

And for the first time in the company’s 37-year history, a Ruby Tuesday will open in the United Kingdom when development begins on the first phase of a franchise for Wales and Southwest England that will allow for five restaurant openings in four-and-a-half years.

This year also marks the beginning of international franchise development of Wok Hay, the company’s pan-Asian concept. There are two Wok Hays currently open, both in the Knoxville, Tennessee area where Ruby Tuesday was founded and has its headquarters.

Layoffs, Furloughs, and Cutbacks Continue, According to Latest APR Survey

Knoxville, Tenn.  – Add “vacations without pay” to layoffs, cutbacks, no raises or bonuses, and elimination of matching 401K payments.

The latest quarterly survey of East Tennessee business leaders by Ackermann PR shows cost cutting is not yet over.  However, despite the continued economic problems, business leaders are cautiously optimistic about the future.

“While vacations without pay were occasionally mentioned in our previous surveys, this is the first time that this was named as a strategy by approximately half of our respondents,” said Cathy Ackermann, President and CEO of Ackermann PR.  “Employers are obviously looking at every available means to try to keep their businesses viable during this economic storm.”

Additionally, East Tennessee is not finished with lay-offs.  A majority of survey respondents – 70 percent – anticipate additional lay-offs at their businesses between now and the end of 2009.

However, almost 90% of the respondents expect their business outlook and revenues to improve in 2010, with most also predicting an end to the recession by December, 2010.  This reflects more optimism than was cited in the two previous Ackermann PR surveys when a substantial number of participants thought the recession would last 3-5 years.

Sent to approximately 300 business leaders in East Tennessee, the survey also listed broad areas of concern.  The top three worrisome areas were:  continuing tight credit for businesses, high unemployment and the national debt.  Lower-ranked concerns included the housing market, the stock market, and government bail outs.  This contrasts with the first-quarter survey, which listed government bail-outs as the number-one concern.

Predictions relative to business volumes/revenues for the third and fourth quarters of 2009 were as follows:

  • 60 percent predict a modest increase (up from 50 percent last time)
  • 15 percent predict a decrease (compared to 28 percent)
  • 10 percent predict a significant increase (down from 12.5 percent)
  • 15 percent predict no change from the first half of the year to the second half (compared to 9.5 percent).

“Comparing this quarter’s answers to last quarter’s, more business executives think their revenues will either stay the same or increase modestly,” said Ackermann.  “Fewer CEO’s think that their revenues will either increase dramatically or decrease.  They are tending now toward more conservative middle ground.”
